[SP] Food review: Hajime Tonkatsu & Ramen


Hajime’s kitchen is helmed by Singapore's First Tonkatsu Chef with 25 years of experience, Chef Tan-San, who was trained in Japan, before returning to Singapore to helm Tonkichi, Singapore's first Tonkatsu specialty restaurant in Singapore, under the Pokka Group. He was also the Pioneer Chef who started up the popular Tampopo Japanese restaurant chain.





Potato Korokke ($3.90) Made to order, their Potato Korokke is only breaded and fried upon order. Made from scratch, the potato are mashed fresh daily and mixed with Japanese Pork bits (seasoned and cooked separately) which brings a fragrant taste when you bite into it. 

Tasted like tempura curry potato & i love it! Super crispy on th outside and warm and soft inside.


Tori karate ($4.90) Specially selected part of chicken thigh meat is used and cut into bite sized chunks to absorb the secret sauce concoction well after hours of marination. Fried only upon order, the highlight will be the tenderness of this flavourful crispy chicken chunks. 

This tasted quite normal to me.



Tonkatsu Miso Fillet ($17.90) Highlight will be the Miso which they curated from Nagoya, Japan. Recipe is bolstered with Red wine & Tonkotsu Broth. Each piece of Fillet is tenderised and breaded upon customer’s order. To bring out the freshness & quality of the pork, there is no pre-seasoning or marination done. We use fresh bread crumbs to give it a long lasting crunch. Our fillet is done just right with a touch of pink in the middle, thus ensuring the tenderness by not over-cooking it. Special Technique is in place to drain off the oil as much as possible to rid the greasiness. Rice from Niigata, famed for growing in pristine waters from melting snow. This particular brand is milled locally to lock in the freshness. This rice is then paired with pickles are made in-house for an appetising palate opener. Tonjiru Soup is prepared using Tonkotsu Broth (simmered for 12 hours), with Japanese Pork, carrots, radish, burdock roots, konnyaku (japanese yam jelly) and a hint of Yuzu. For the Goma (Sesame) Seeds, we roasted them to fragrance thus after grinding (using the Goma stick & bowl) and coupled with Tonkatsu Sauce or mixed with the Miso Sauce, it brings a new level of flavour as dipping for the Katsu. There is a dab of mustard provided as well which adds a zing to the taste.
Our crunchy cabbage is freshly sliced and washed multiple times with ice water to rid the raw taste. This cool, thinly sliced cabbage goes best with Tonkatsu. Unlike most Tonkatsu shops, we use Wafu dressing instead of Goma dressing. It is lighter tasting, healthier & more refreshing. This provides balance to the fried Katsu and ensures that your your taste buds are not overwhelmed. To end the meal, they have the juicy water melon which gives a soothing effect for a wholesome meal.

One of th best tonkatsu I've ever eaten in my life that I actually finished all of these up!!! I love th crispiness and taste of th breadcrumbs and pork which goes well w the cabbage. Very refreshing! Not forgetting that th miso sauce which was so good as well, salty and sweet. I actually LOVE th wasabi at th side which taste rly good along w th pork!!!


Ebi ramen ($16.90) “1st Ebi-Fry Ramen in Singapore created by Chef Tan-San” Tonkotsu Base Broth simmered in-house for 12 hours and infused with a secret Sakura Ebi Paste made in house for the extra oomph. No added MSG and all natural goodness. Nama Noodles which is produced by a Japanese Company using Japan Flour right here in Singapore to ensure the freshness. The Ebi Fry is not pre-breaded but only breaded and fried upon order. Fresh bread crumbs are used for the extra crunchiness. Tasted exceptionally well with our home-made tartar sauce. Loin Rib Chashu is also marinated in-house using a special recipe sauce. Special cut of the Japanese Pork Loin is sourced by Chef Tan-San to bring a flavorful taste to the dish Topped off with Menma (Bamboo shoots) imported from Japan, Moyashi (Bean Sprout), Greens, dash of Japanese La-Yu (chilli oil) & a generous sprinkle of crispy Sakura Ebi.

This is new on their menu, which tasted just like our local prawn noodles and I find it very special to see such an interesting dish on the japanese menu. Love it as well!



Katsu Don ($12.90) Chef Tan-San give a slight twist to this all-time favourite comfort food. Instead of cooking the Pork Fillet Katsu with the sauce & egg, katsu laid over the Niigata rice with Nori (seaweed) pieces in between them. Then the runny eggs, which has been cooked together with caramelised onions & home-made Donburi sauce, are laid over the katsu. While some of the sauce will flow through into the rice blending well, the crunchiness of the katsu will remain. The set is also served with Tonjiru Soup, home-made pickles & watermelon. 

This don tasted quite normal to me but it is still yummy!

What I love most about this place is their wonderful and friendly service and their very affordable yet quality dishes. What's best is that, there are no gst and service charge here!!! So if you are finding a good yet cheap place for japanese food, I would highly recommend that this place is th one you are looking for.
